Happy 4th of July! I hope everyone has had a wonderful and safe holiday so far. I had a long weekend and caught up on some much needed rest and a little bit of work.
I already recapped Saturday in my last post, and on Sunday we woke up, went to church, got some lunch at O’Charley’s, and then went to the gym. Eating at restaurants can be tough when you’re watching your calorie intake, but I tend to stick to things like chicken, steak, or burgers without the bun. At lunch, I got the bacon cheeseburger with no bun and no condiments. It came with french fries as a side and I had a couple of them because I don’t believe in eliminating things and I LOVE french fries. Taking the bun and condiments off the burger eliminated over 400 calories and it still tasted great! It’s a win-win situation!
Monday, I took Maddie to school and then spent the day resting since I wasn’t feeling 100%. I also got some videos filmed and edited, so I was pretty productive! I made cauliflower crust pizza for dinner- it didn’t turn out like I had hoped so I think I’m giving up on cauliflower crust. If you have any tips or a failproof recipe, let me know! I have tried so many recipes and this one turned out the best of all of them but it’s a lot of work for sub par pay off so I may just try a brand I found on Amazon that makes cauliflower crust.
Today, I woke up around 7 (which is sleeping in when you have a toddler) and then went to the gym for a quick workout. I ended up doing 30 minutes on the stairmaster which is the most time I’ve ever spent on that machine! The stairmaster is super tough! I did the first 10 minutes at a medium-low pace, then I did intervals for the second ten minutes. I would do 1 minute at level 3, then 1 minute at level 12 for 10 minutes. After the interval session, I did 3 minutes on 3 to get my heart rate down (during intervals, it was in the 180s!) and then I alternated right side and left side stepping for 4 minutes. For the last 3 minutes, I did an easy cool down at level 4 and then called it a day! I was SO sweaty. I still am not a huge fan of the stairmaster, but I don’t hate it as much as I used to and I will definitely continue to incorporate it into my workout routine.
After the gym, I went home and organized some of our important documents. Staying organized with things like birth certificates, passports, and marriage licenses is super important so I went through all of our papers and put them in an organized and safe place. After that, Maddie and I did some art while Mike was at the gym. She and Mike went on a walk while I was at the gym, but when I got home it started to rain, so we were stuck inside. We colored a little bit and then, once Mike got home, we ate some lunch.
After lunch, Mike picked up some poppers and some water balloons. Maddie loved throwing the poppers on the ground and we all had a lot of fun throwing water balloons at each other! For dinner, we’re going to have cheeseburgers in lettuce wraps and I’m going to make some brownies for dessert.
Now, time for my July goals! I know we’re already a few days into July and usually I post my goals the first day of each month, but it’s better now than never! If you’re new to my blog, I have been writing out my goals for each month. I find that people wait for these grand times like a birthday or the new year to create new goals, but every day is a new opportunity so I like to take advantage of the beginning of each month and create new goals for myself.
This month I have a few goals.
- Stick to a budget
My credit card has been paid off and now we are working to increase our savings. We want to purchase a house within the next year, and cash is a big part of buying a house! Between down payments, closing costs, inspection fees, and moving expenses, there is a lot of money rotating around and we want to be able to save as much as possible so we can feel confident when we do decide to purchase. This means that I need to stick to a budget of my own. Now, my husband handles our finances, but, after I help pay for bills and what not, I do have a little money for myself every month to spend. I need to get better at spending that money wisely. In the past, I have spent pretty frivolously, if I’m being honest, and that has only caused me to use my credit card when I really didn’t need to. This month, I will be sticking to a budget!
- Be consistent with my fitness plan
This has been a goal each month, but I’m really finding my groove so I want to stay consistent with my food and exercise! I’ve found something that works for me that helps me lose weight but not be crazy about what I’m eating so I want to keep up my momentum!
- Be confident
This month, I’m going to my first EVER professional conference and I’m going by myself. It’s going to be pretty nerve wracking since I don’t know what to expect and I’m doing to have to figure it out alone, but I’m confident in my professional ability so I’m sure it will be fine! I’m just going to have to be very mindful and make sure I don’t get overwhelmed.
- Be patient
I am not a very patient person, but I will need a whole lot of patience this month! July is going to be crazy busy for our family and I know I’ll need to be flexible and patient throughout the entire month. There’s a lot of fun to be had but a lot of business to do so I need to just keep my head level!
